Mushroom, Pine Nut and Rocket Pizza

An exciting vegetarian menu option loaded with mushrooms. The layer of wild rocket and classic balsamic vinegar makes this pizza pop.

Mushroom pine nut pizza
  • 170 g pizza dough, rolled and ready

  • 600 g open cap field mushrooms

  • 50 mLs extra virgin olive oil

  • 2 cloves garlic, crushed

  • 5 g salt and freshly ground black pepper, to taste

  • 1 handful Perfect Italiano Pizza Blend cheese

  • 80 g wild rocket

  • 10 mLs olive oil, for dressing

  • 10 mLs balsamic vinegar, for dressing

  • 50 g pine nuts, toasted

  • 10 g Perfect Italiano Shaved Parmesan to garnish

  1. Toss mushrooms with oil, garlic, salt and pepper, then bake in a preheated 190°C oven for 15 minutes or until cooked.

  2. Cover pizza base with Perfect Italiano Pizza Plus and bake for 10-15 minutes or until cheese has melted. Lightly dress rocket with oil and vinegar and arrange on top of hot pizza. Top with baked mushrooms, pine nuts and Perfect Italiano Shaved Parmesan.
